The Basic Pressure Cooker Method

Mushroom cultivation commonly uses pressurised steam to prepare nutrient-rich materials such as grain, supplemented hardwood, agar and liquid culture.

Target

Approximately 15 PSI

At around 15 psi above atmospheric pressure, saturated steam is approximately 121°C under typical sea-level conditions.

Timing

Start the timer at pressure

Heating time does not count as sterilisation time. Begin timing only once the cooker has reached and stabilised at its target pressure.

Dense loads

Large bags need longer

A small bottle of agar heats through much more quickly than a dense 2 kg bag of grain or hardwood substrate. The centre of the load is what matters.

Cooling

Allow pressure to fall naturally

Do not force the lid open or rapidly depressurise a cooker containing mushroom grow bags or culture media. Allow the vessel to return to zero pressure naturally.

Pressure cooker safety comes first

Always follow the instructions supplied with your specific cooker. Never obstruct a vent or safety valve, defeat a locking mechanism, exceed the rated pressure, operate the cooker without enough water, or attempt to open it while it remains pressurised.

This guide is about mushroom cultivation.

It is not a guide to preserving or pressure-canning food. Food canning requires tested recipes, equipment-specific procedures and food-safety guidance.

02 The Science

Why Mushroom Growers Use Pressure Cookers

Boiling water at normal atmospheric pressure reaches roughly 100°C. Raising the pressure inside a sealed vessel allows water and steam to reach a higher temperature.

Mushroom grain and supplemented substrates are excellent food sources not only for mushroom mycelium, but also for moulds, bacteria and other microorganisms. Pressurised steam provides a much more reliable method of preparing these nutrient-rich materials than ordinary boiling.

Pressure itself does not sterilise the substrate.

The purpose of pressure is to allow steam to reach a higher temperature. Moist heat transfers energy efficiently into the material and is what provides the sterilising effect.

03 Equipment

Choosing a Pressure Cooker for Mushroom Growing

The most useful pressure cooker for mushroom cultivation is one large enough for the jars or bags you intend to use and capable of reliably maintaining the required operating pressure.

Stovetop pressure cooker

A large stovetop unit capable of approximately 15 psi is one of the most common choices for home and small-scale mushroom cultivation.

Pressure canner

Large pressure canners offer good capacity and are popular where several jars or large bags must be processed in one load.

Electric pressure cooker

Electric multicookers vary considerably. Some operate below 15 psi and may not maintain the same conditions as a dedicated pressure canner or autoclave.

Laboratory autoclave

An autoclave provides much tighter control over temperature, steam, pressure, air removal and cycle timing.

04 Before Every Run

Check the Cooker Before Loading It

Check the vent

Confirm that the main steam vent is clear and unobstructed before using the cooker.

Inspect the gasket

Look for splitting, hardening, deformation or damage that could prevent the lid from sealing correctly.

Inspect safety devices

Check pressure locks, over-pressure plugs and safety valves according to the equipment manufacturer's instructions.

Use a rack

Jars and grow bags should normally be supported above the direct heat of the cooker base using the appropriate rack or trivet.

Add enough water

Use the quantity specified by your cooker manufacturer and make sure there is sufficient water for the complete sterilisation cycle.

Check your heat source

The hob or burner must be suitable for the weight and base of the loaded pressure cooker.

05 Loading

How to Load Jars and Mushroom Grow Bags

Correct loading is essential. A cooker packed as tightly as physically possible may heat much less evenly than a load that allows steam to move around the containers.

Keep containers off the base

Use the cooker's rack or a suitable trivet to protect jars and bags from direct contact with the hottest surface.

Leave steam pathways

Do not compress the load so tightly that steam circulation around the jars or bags is severely restricted.

Keep the vent clear

Large grow bags must never be positioned where expanding plastic could obstruct the steam vent, regulator or safety devices.

Use heat-rated bags

Use autoclavable mushroom filter-patch bags designed for high-temperature steam treatment.

Loading grain or substrate bags

  • Distribute the substrate evenly instead of creating one very thick mass.
  • Keep filter patches clean and away from standing water where possible.
  • Fold excess plastic neatly so it cannot rise towards the vent.
  • Leave room for steam to circulate between bags.
  • Do not wedge bags tightly against the regulator or lid mechanism.
  • Do not exceed the cooker manufacturer's fill limits.

The Complete Pressure Sterilisation Cycle

Prepare the material

Hydrate your grain, substrate, agar or liquid culture correctly.

Add the manufacturer's recommended amount of water and install the cooker rack.

Arrange jars or bags securely and make sure nothing can obstruct the vent.

Lock the lid exactly as described by the cooker manufacturer.

Why does a 2 kg bag take so long?

The cooker chamber can reach sterilisation temperature long before the centre of a dense substrate bag does. A small agar bottle and a 2 kg block therefore should not receive the same cycle.

08 What Are You Sterilising?

Grain, Hardwood, CVG, Agar and Liquid Culture

Grain

Sterilised Grain

Wheat, rye, millet, oats and other grains are highly nutritious. Once hydrated they are ideal for mushroom mycelium, but also for bacteria and mould.

Grain should therefore be properly pressure sterilised before inoculation with liquid culture, agar or clean colonised grain.


Hardwood

Supplemented Hardwood

Adding wheat bran, soy hulls or another nutrient-rich supplement to hardwood dramatically increases the amount of available nutrition.

Supplemented hardwood should normally be pressure sterilised and inoculated using clean technique.


CVG

Coco Coir, Vermiculite & Gypsum

CVG is much less nutrient-rich than grain or supplemented hardwood. Some cultivation methods therefore use hydrated or pasteurised CVG rather than fully sterile substrate.

CVG can also be pressure sterilised when used as part of a suitably clean cultivation workflow.


Culture Work

Agar

Agar contains a relatively small amount of material and therefore heats through quickly compared with large substrate bags.

Excessive heating can darken some agar recipes and may affect heat-sensitive ingredients.


Culture Work

Liquid Culture

Liquid culture contains water and a small amount of carbohydrate such as malt extract, honey or another suitable nutrient source.

Because the liquid heats quickly, relatively short pressure cycles are normally used.

09 After Sterilisation

Cooling the Pressure Cooker Properly

Turn off the heat

Leave the pressure cooker to depressurise naturally.

Do not force-cool it

Do not deliberately release pressure simply to gain access to the load faster.

Wait for zero pressure

Confirm that the gauge has returned to zero and any locking indicator has fully released.

Open away from your face

Steam inside the vessel remains extremely hot even once pressure has fallen.

Large mushroom bags stay hot for hours.

A 2 kg bag may feel cool on the outside while its centre is still far too hot for mushroom culture. Allow bags to cool completely before inoculation.

Can you leave bags in the pressure cooker overnight?

In many home cultivation workflows, yes. Once the sterilisation cycle is complete and the cooker has safely depressurised, allowing sealed substrate or grain bags to cool for several hours or overnight is often convenient.

10 Contamination Control

Sterilisation Is Only Half the Job

Sterile grain or substrate can become contaminated again during inoculation or handling. Good post-sterilisation technique matters just as much as the cooker cycle itself.

Keep bags sealed

Do not unnecessarily open sterile grow bags after cooling.

Protect the filter

A damaged or saturated filter patch can compromise an otherwise successful batch.

Use clean culture

Sterile grain inoculated with contaminated culture will still become contaminated.

Clean injection ports

Wipe self-healing injection ports appropriately before inoculation.

Use sterile needles

A sterile culture requires a clean inoculation route.

Cool completely

Inoculating while the centre is still hot can damage or kill the mushroom culture.

11 Troubleshooting

Common Pressure Cooker Problems

The cooker will not reach pressure

Check for steam leaking around the gasket, an incorrectly fitted lid, inadequate heat, a damaged sealing ring or a problem with the vent or regulator.

The pressure keeps rising and falling

The heat source may be too aggressive or inconsistent. Once target pressure is reached, reduce the heat gradually until the cooker holds stable pressure.

The regulator is releasing huge amounts of steam

The heat may be higher than necessary. Excessive steam loss wastes water and increases the risk of the cooker running dry.

The pressure dropped during the cycle

Restore operating pressure. For a reliable run, restart the timed holding period once target pressure is stable again.

Grow bags inflated inside the cooker

Some expansion can occur as the cooker heats. This is why bags must be positioned so expanding plastic cannot obstruct the vent or safety mechanisms.

The bottom of a grow bag melted

This may indicate direct contact with the hot cooker base, unsuitable bag material or insufficient water. Use autoclavable mushroom bags supported on a rack.

I sterilised correctly but the grain still contaminated

Possible causes include contaminated culture, insufficient heat penetration, damaged filters, poor inoculation technique or overly wet grain.

The grain looks wet after pressure cooking

Some condensation is normal immediately after sterilisation. Persistent pooling, burst kernels and saturated grain may mean the grain was too wet before sterilisation.

The outside of the bag is cool but the centre is warm

Wait longer. Large bags cool from the outside inward and can remain hot internally for many hours.

Improving Sterilisation Reliability

Standardise bag weight

Consistent bag sizes make sterilisation cycles easier to repeat successfully.

Standardise hydration

Use consistent recipes and moisture content between batches.

Record each cycle

Record substrate type, bag weight, number of bags, pressure, holding time and any pressure fluctuations.

Track contamination

Good records can reveal whether failures are associated with a particular bag size, recipe or cycle.

Chamber pressure is not the same as core temperature

A pressure gauge tells you what is happening inside the cooker chamber, not necessarily what is happening at the centre of a large substrate block. Dense loads need time for heat to penetrate fully.

Looking After Your Pressure Cooker

Clean the vent

Inspect it regularly and clean it according to the manufacturer's instructions.

Inspect the sealing ring

Replace hardened, damaged or distorted gaskets with the correct replacement part.

Check pressure equipment

Regulators and gauges should be maintained according to the manufacturer.

Remove mineral deposits

Hard water can leave scale inside the vessel. Use a cleaning method suitable for the cooker's material.

Dry after use

Once cool, clean and dry the cooker before storage.

Use correct replacement parts

Safety valves, regulators and gaskets should never be improvised.

Mushroom Pressure Cooker FAQ

Do I need 15 psi to grow mushrooms?

Not for every growing method. Pasteurised straw, outdoor woodchip beds and ready-sterilised bags are examples where home pressure sterilisation may not be needed.

Around 15 psi is, however, a common target when preparing sterile grain, supplemented hardwood, agar and liquid culture.

Why is 15 psi used?

Approximately 15 psi above atmospheric pressure allows saturated steam to reach roughly 121°C under typical sea-level conditions.

Can I use a normal saucepan instead?

Ordinary boiling can be useful for some pasteurisation techniques, but it does not provide the same conditions as pressure sterilisation for highly nutritious grain or supplemented substrate.

Can I use an electric pressure cooker?

Possibly, but check the actual pressure and temperature reached by that model. Not all electric units operate at the same pressure as a large stovetop pressure cooker or canner.

How long should I pressure cook a 2 kg grain bag?

Around 150 minutes at approximately 15 psi is a useful practical starting point for a dense 2 kg grain bag.

How long should I pressure cook a 2 kg hardwood substrate bag?

Can I pressure cook two 2 kg bags together?

Yes, if the cooker is large enough for both bags to fit safely, with enough room for steam movement and without obstructing the vent.

Can grow bags touch each other?

Some contact is normal, but avoid packing the vessel so tightly that there are no useful steam pathways.

When do I start timing?

Should I turn the hob down after reaching 15 psi?

Can I release the pressure manually when the timer finishes?

Does pressure sterilisation guarantee no contamination?

No. Contamination can still be introduced afterwards through culture, needles, injection ports, damaged filters or poor handling technique.

Should CVG be pressure sterilised?

It depends on the cultivation method. Some methods use hydrated or pasteurised CVG, while others use sterile CVG as part of a cleaner workflow.

Is a pressure cooker the same as an autoclave?

No. Both can use pressurised steam, but autoclaves are specifically designed to control and validate sterilisation conditions more precisely.

Pressure, time and heat penetration all matter.

Successful pressure sterilisation is not simply a matter of seeing 15 psi on the gauge. Prepare the material correctly, load the cooker safely, reach stable operating pressure, give the load enough time to heat through and allow the cooker to cool naturally.

Small agar and liquid-culture containers may need only short cycles, while dense 2 kg grain or supplemented hardwood bags can require around 2 to 2.5 hours at pressure.

Once the material is sterile, protect that work with clean culture, intact filter patches, sterile inoculation equipment and good technique.
